Shrimp Boil

 

1 onion, quatered

 

1 to 2 pound large shrimp

 

6 to 8 red boiling potatoes

 

4 ears of corn, halved or cut in thirds

 

4 to 5 andouille sausage links, sliced

 

1 cup salt

 

2 lemons, cut into wedges

 

¼ cup cajun seasoning (equal parts salt, onion powder, garlic powder, chili powder, oregeno, thyme with a pinch of cayenne)

  1. Bring approximately 4 quarts of water and salt to a boil. Add 1 Tablespoon cajun seasoning, onion , and red potatoes and simmer, covered, for 15 minutes. Add corn and continue simmering for 7 more minutes. Add sausage and continue simmering 3 more minutes. Add the shrimp, cover and remove from heat. The shrimp will cook very quickly.

 

  1. Ladle approximately ½ cup of broth from the boil over 2 Tablespoons of butter as a dipping sauce.

 

  1. Drain the boil and pour the contents over newspaper. Sprinkle with cajun seasoning. Guests eat straight from the table, dipping in the sauce.
